Summer prawns
Ingredients
- 24 green king prawns
- 2 zucchinis, cut into 1/2 cm slices
- 1 lemon
- 8 sprigs thyme, chopped
- 5 cloves garlic, finely chopped
- 1/2 cup extra virgin olive oil
- salt and pepper
Preparation
- Combine the oil, thyme, garlic, vinegar, lemon juice and salt in a large bowl.
- Add the king prawns and zucchinis and toss to coat. Cover and refrigerate for at least 30 minutes.
- Heat the barbecue plate to high and cook the prawns and zucchinis for about 1 minute on each side or until ready. Remove from the barbecue and allow to stand for about 2 minutes.
