Summer prawns

Ingredients
  • 24 green king prawns
  • 2 zucchinis, cut into 1/2 cm slices
  • 1 lemon
  • 8 sprigs thyme, chopped
  • 5 cloves garlic, finely chopped
  • 1/2 cup extra virgin olive oil
  • salt and pepper
Preparation
  • Combine the oil, thyme, garlic, vinegar, lemon juice and salt in a large bowl.
  • Add the king prawns and zucchinis and toss to coat. Cover and refrigerate for at least 30 minutes.
  • Heat the barbecue plate to high and cook the prawns and zucchinis for about 1 minute on each side or until ready. Remove from the barbecue and allow to stand for about 2 minutes.
